Quick question: I am building a high voltage power supply and wondered if a 200V ripple on 30kV was going to be noticeable on the plasma? Thank you

Nope, not in the slightest, especially above a few 100 Hz.

Those of us who use old 60 Hz X ray transformers just use the raw unfiltered output of a full wave rectifier and it works just fine for a fusor.
The more reactive the materials, the more spectacular the failures.
The testing isn't over until the prototype is destroyed.
