I have been searching on ebay for variacs with the right specs with no success. I have not been able to find a variac with high enough specs. Won't I be looking for a variac that can take 12kv or whatever down to 0v if I am going from NST to variac to diode assembly? What specs should I be looking for? Is it possible to just use a hv variac to supply a demo fusor?

You put the variac in the 120v line to the NST, not on the output. I really doubt you'll find a high voltage variac. Many will go up a little from the input voltage - say to 140v, which most NST's will tolerate for a little more output. If you can't find a good one on ebay, try Marlin Jones or similar. A 500w one will sometimes pop its fuse on a max sized NST, but they aren't too expensive.
